Summer Arugula Salad with Pickled Onions

I love this Summer Arugula salad with Pickled Onions! So does everyone I serve it to. It goes really well with grilled steak which makes for a great summer meal! It is alive with flavor and nutrient dense!

A Little Bit About Arugula

Get the freshest Arugula you can find. Organic definitely has more flavor. You can taste the difference. Arugula or rocket is an edible plant used for its peppery flavor. You can add your favorite nutrient dense topping to it and a homemade vinaigrette and it is a nice switch from traditional lettuces. The good news is it is in the same family as Kale!

Arugula is a leafy green vegetable that has many nutritional benefits for almost every area of the body, from the heat to toe, as well as the skin and blood vessels. A zesty addition to any salad, it’s also great in other recipes, such as pesto and soup. I have even seen it on pizza!

You want to make sure your arugula looks fresh without any yellow or wilted leaves.

The Recipe for Summer Arugula Salad is Simple

  1. Wash and dry Arugula and place in large salad bowl.
  2. Add organic heirloom tomatoes to give it a great color.
  3. Dice an avocado and spoon it into salad.
  4. Sometimes I will add cucumbers as well.
  5. Add Pickled Onions
Lime Infused red onions are a compliment to any dish!

How to make the pickled onions:

You will need a lime, medium onion, salt, pepper and one tablespoon of olive oil (optional).

  • Slice a medium red onion thinly and place in stainless or glass bowl.
  • Zest a lime and set aside to sprinkle on the salad.
  • Juice one lime over the onions.
  • 1 Tablespoon of Olive Oil (Optional)
  • Salt and Pepper to taste.

Since you are using these onions on the Arugula Salad you can add 1-2 tablespoons of high-quality olive oil to the onions which will make a nice dressing. If I am making the onions for burgers then I leave the oil out.

Toss onion and lime mixture and allow to marry for 30 minutes.

Spread over salad and toss! Serve as a side to grilled meat or fish! I love to add fresh organic corn on the cob as a side. I have been found to slice the corn off of the cob and add chimichurri to my steak. WOW talk about flavor! This is a meal that will have your mouth watering every time you think about it!

If the salad is a little dry you can add a vinaigrette dressing or additional lime juice and olive oil as well. I will also add a little salt and pepper to the whole salad.
